Hi.. This time I want to cook a Malaysian dish, specifically from the state of Johor, called "Asam Pedas" or in translate we called "Sour & Spicy".
"Asam Pedas" is a stew dish that uses simple sautéed ingredients commonly found in the kitchen. It has a slightly sour and spicy flavor. For this recipe, we will use fish called "Torpado Scad Fish" (Ikan Cencaru) and add Okra as a complement. Happy cooking!
👆Ingredients:
(ingredients to be blend)
30 dried chilies.
2 cm ginger.
2 cm turmeric.
5 cloves garlic.
2 large onions.
A bit of shrimp paste.
Minimum water for blending.
Other :
2 tbsb Tamarind (mix with water).
1/2 tbsb Salt,
1/4 tbsb Sugar,
cooking oil
Laksa leave (Daun kesum).
Instructions
👆Prepare the Fish:
Clean the Torpado Scad fish @ 'ikan cencaru' by removing its tough skin and gutting it. Rinse the blood thoroughly with clean water.
👆Prepare the laksa leave:
prepare a handful of laksa leaves @ "daun kesum" with the hard stems removed. then wash with clean water.
👆Blend the Chilies: First, soak and boil the dried chilies, then blend them until smooth.
Add other Ingredients: Once the chilies are blended, add the onions, garlic, turmeric, and shrimp paste. Blend until finely mixed.
👆Sauté the mixture: Heat oil in a pan until hot. It’s recommended to use a bit more oil for easier sautéing of the blended mixture.
Cook the Spices: Add the blended mixture to the hot oil and sauté until fragrant and slightly crispy, stirring continuously to prevent burning.
👆Add salt to taste and a little sugar.
👆Stir in the Laksa leaves (Daun kesum).
👆Cook the Fish: Add the cleaned cencaru fish and mix it with the sautéed spices.
👆Add Tamarind: Pour in tamarind mix with water and allow it to cook until slightly crispy again.
👆Add enough water to achieve the desired thickness of the gravy, about 1.5 cups recommended.
👆Add the okra and let the dish simmer on low heat until the okra is tender.
Taste the gravy and adjust the seasoning for saltiness.
