Pineapple filling for making pineapple tart

Here’s how I make pineapple filling for making Tart. I will use 10 ripe pineapples.

Ingredients:

  • 10 ripe pineapples (980g -1100g/ripe), peeled and grate.
  • 2kg sugar
  • 1/4 ts food colouring (yellow egg)

Instructions:

Prepare the Pineapples:

Peel and grate the pineapples.





Cook the Pineapples:
In a large pot, combine the grate pineapples. Cook over medium heat until the mixture starts to bubble.




Add Sugar & Food Colour:
Gradually add the sugar stirring continuously until it dissolves. 




Simmer:
Allow the mixture to simmer, stirring frequently to prevent sticking. Stir the grated pineapple until it becomes slightly sticky.


Check Consistency
To know if the filling is ready. Once it becomes sticky, use a wooden ladle and lift the filling. If the filling does not fall, it is ready.
